2016 Domenica Chardonnay

The fruit for this wine comes from the Warner vineyard, immediately adjacent to the Domenica vineyard in the heart of the Beechworth G.I.

The vineyard is located at around 450m altitude, on a granitic soil profile.

The 2012 growing season was characterised by cooler than average conditions, with good rainfall, allowing for stress free growing conditions. Harvest took place in mid march, with ripe fruit in excellent condition.

Hand harvested fruit was lightly crushed, basket pressed, and settled off gross lees before transfer to French barriques, 20% new, where fermentation was allowed to proceed using wild yeast. A relatively warm ferment, in combination with the wild yeast, some use of solids, oxidative juice handling, malolactic fermentation and long (18 month) barrel maturation has resulted in a wine of texture and structure, striking a balance between youthful fruit, and secondary “winemaking derived” characters.

Tasting Notes

Pale green / gold colour. The nose displays the grapefruit and white peach typical of the region and vineyard. Aniseed and matchstick barrel ferment characters are present, though not obtrusive. The entry to the palate is deceptively fine, a stony acidity  precedes a broadening in the mid palate where the  chardonnay fruit characters become dominant.  The wine is made to reward time in the cellar, in it’s youth some oxygen contact, and increasing temperature will assist the palate to show it’s true depth. Drink it with seafood.
